El Salvador

Bourbon heritage, volcanic highlands and the birthplace of Pacamara

About El Salvador

El Salvador is the smallest country in Central America, but it has an outsized place in coffee history. Much of its coffee grows on the slopes of a chain of volcanoes, and a large share of its farms still grow old Bourbon trees. Two well-known varieties come from here: Pacas, a natural mutation of Bourbon found on a Salvadoran farm, and Pacamara, a cross between Pacas and Maragogipe developed by Salvadoran researchers.

Most of the country's coffee is shade-grown, and coffee farms make up a large part of its remaining forest cover. Processing is mostly washed, with honey and natural lots becoming more common.

Harvest typically runs from November through March.
