Wush Wush Natural | Ethiopia
Wush Wush is one of Ethiopia's rarest varietals, named after the
town in the Bench Maji zone where it was first discovered, and
grown here by 350 smallholder farmers in the Oromia region at
extreme elevations. Many of these trees are over 50 years old,
producing lower yields and extraordinary cup quality. De La Finca
has worked with this supplier for seven years.
What sets this lot apart is the process. After selective hand-
picking, cherries undergo 120 hours of controlled anaerobic dry
fermentation in sealed containers before moving to raised drying
beds for 18 to 21 days.
The result is exactly what that process promises... sangria, fruit-
forward intensity, floral aromatics, and a sweet, lingering finish.
