From the Shakiso area of Ethiopia's Guji zone, this fully washed
Grade 1 lot comes from a washing station serving 310 smallholder
producers. De La Finca has worked with this supplier for seven
years, built on a producer partnership that goes back sixteen and
the consistency shows.
Cherries are de-pulped within six hours of harvest, fermented for
24 to 36 hours, and washed through three separate channels
before slow-drying on raised beds for 10 to 14 days. The entire
process is built around clarity and the washing station's
investment in water recycling systems makes it as
environmentally responsible as it is precise.
The cup reflects all of it: black tea, floral aromatics, and bergamot
with the clean, sparkling finish Guji is known for.
